原料:猪前肘、

调料:花椒、大料、绿青豆、葱、姜、蒜、草果、香叶、冰糖、捆肘子的细白绳
做法:





1、洗净肘子、用小刀把肘子上的细毛脏泥刮净(这步相当关键,Body parts worksheet - Qzone log,即使买来加工好的也一定要刮,nike air max,刮完您会发现上面很脏的)
2、将猪肘上的肉裹在皮内,用棉绳扎好(这是酱肘子不肉碎脱皮的秘诀,一定要仔细扎好,任肘子在锅内翻滚也 不会出现皮脱肉碎的现象了)




3、锅内放凉水下肘子,焯水使肘子内的血沫随着水温上升吐净

4、锅中做开水放入葱段、姜片、大蒜、老汤、月桂叶、草果、八角、小茴香、豆蔻、花椒熬制




5、将焯好的肘子从锅中捞出

6、开始炒糖色了,エアマックス24-7,大家可以参考我这个比较细,锅烧热放少许油放入冰糖




7、小火待冰糖慢慢融化

8、将冰糖变成琥珀色,用竹铲子慢慢搅拌





9、冰糖变成酱色、要注意火候,不要太大
10、当出现大量气泡用有些烟产生,准备随时离火烹入开水,エアマックス,糖色就成功了。





11、将糖色倒入熬制好的汤锅里
12、放入焯好的猪肘子,エアマックス2011,汤要没过肘子一点,大火烧开,烹入绍酒




13、转成中火盖盖

14、一小时后开盖加入盐、胡椒粉、白糖、酱油调味




15、中火酱制半小时待肘子入味

16、待肘子皮肉出现枣红色,即可转大火收汁




17、将肘子在大锅中翻个,久咳嗽不好有一个八元的药方,并用勺子不断浇汤,保持皮肉一致。

18、最后大火收汁将肘子捞出,皮也没脱、肉也没碎,扎的挺结实,成功了,air max




19、将锅中老汤烧热煮熟青豆,并收拢汤汁,ナイキ エアマックス,全国特产一览表 这下好了,到哪就知道买啥东东好了

20、用剪刀剪去扎肘子的棉绳即可上桌食用了。
