  吃盐过多会给身体带来许多伤害,这已是众所周知的事实。只是,耐不住美食的诱惑,不知不觉中,人们的摄 盐量还是太多。那么,在烹调中有什么办法可以既减少放盐量,又不失美味呢?
  加酸能减盐
  人体味觉研究告诉我们,食物的味道之间有奇妙的关系。其中,盟特,酸味就是咸味的“增强剂”。实验证明,在1%―2%的食盐溶液中添加0.01%的醋酸就可以感觉到咸味更 强。因此加小半勺盐,只用加几滴醋就可以让咸味更明显,而减少食盐的用量。
  放糖会增盐
  既然咸味有它的“增强剂”,当然也有“减弱剂”,这就是甜味。实验证明,在1%―2%的食盐溶液中添加 10%的糖,光波炉原理,几乎可以完全抵消咸味。所以在很多咸甜口味的菜里,食盐的浓度要比感觉到的水平更高。因此,糖醋排骨、鱼 香肉丝等菜要少吃。南方人做菜都喜欢放点糖来提鲜,加湿器,这对控制盐的摄入也很不利,光波炉正品
  除了咸甜口味的菜,非常甜的食品也要少吃。因为这样的食品中,也含有一定的盐。这也是味觉间相互作用的 结果。所以,很甜的蜜饯中都会加入盐,甜面包中的盐含量也不少。
